Greek Olive Oil Cake
INGREDIENTS
2 ½ cp | Sugar |
2 ½ cp | All purpose flour |
½ tsp | Salt |
1 T | Baking Powder |
3/4 cp | Orange juice |
1 cp | Greek Olive Oil |
2 T | Greek yogurt |
4 | Eggs |
1 tsp | Vanilla extract |
garnish | Grated zest of 1 Lemon |
2 tsp | Lemon extract |
Directions
Preheat oven to 325. In a large bowl blend ingredients on low speed until moist, then beat for 3 minutes on medium speed.
Grease loaf pan and pour mixture ¾ of the way to top. There will be extra batter which makes an additional 6 muffins.
Bake for 50 minutes, or until toothpick comes out clean. Cool completely before slicing.
Orange Glaze:
- 1 ¼ cup Powdered sugar
- ¼ cup Orange Juice
Thoroughly mix and drizzle over cake once cake has cooled.
