Brussel Sprout and Kale Slaw

INGREDIENTS

8 Brussels sprouts
3 cp Finely chopped kale
4 T Lemon Pepper olive oil
3 T White balsamic
1 tsp Dijon mustard
1/4 cp Dried cranberries
1/4 cp Golden raisins
1/4 cp Sliced almonds
Salt & pepper

Directions


8 Brussel sprouts lightly chopped in food processor, mandolin, or box grater to get different textures.

3 cps finely chopped kale with center rib removed Season liberally with salt and pepper and juice of 1 slice of lemon. Vinaigrette:

4 T Lemon Pepper olive oil 3 T White balsamic 1 tsp Dijon mustard

Thoroughly combine then pour into sprout /kale mixture in medium bowl.

Add 1/4 cp each of dried cranberries, golden raisins, and sliced almonds. Salt and pepper to taste.
