Brussel Sprout and Kale Slaw
INGREDIENTS
8 | Brussels sprouts |
3 cp | Finely chopped kale |
4 T | Lemon Pepper olive oil |
3 T | White balsamic |
1 tsp | Dijon mustard |
1/4 cp | Dried cranberries |
1/4 cp | Golden raisins |
1/4 cp | Sliced almonds |
– | Salt & pepper |
Directions
8 Brussel sprouts lightly chopped in food processor, mandolin, or box grater to get different textures.
3 cps finely chopped kale with center rib removed
Season liberally with salt and pepper and juice of 1 slice of lemon.
Vinaigrette:
4 T Lemon Pepper olive oil
3 T White balsamic
1 tsp Dijon mustard
Thoroughly combine then pour into sprout /kale mixture in medium bowl.
Add 1/4 cp each of dried cranberries, golden raisins, and sliced almonds.
Salt and pepper to taste.
