Roasted Parsnips with Apples and Figs
INGREDIENTS
6-8 | Parsnip peeled & sliced |
1/2 cp | Small apple diced (Honeycrisp or Gala works well) |
1-2 | Apple chicken sausage sliced |
4-6 | Fresh figs quartered |
2 T | Olive oil |
1/4 tsp | Cardamom |
1/4 tsp | Nutmeg |
1/4 tsp | Salt and pepper each |
1/4 cp | Runamok Cardamom Infuse Maple Syrup |
Directions
Preheat oven 400
Sautee sliced sausages in a litle bit olive oil until thoroughly cooked. Set aside.
In a bowl mix together parsnips, apples, olive oil and seasonings.
Prepare sheet pan, line with parchment paper and spread parsnips and apples evenly on pan.
Bake 15 minutes, then turn, add figs and conitnue baking for 10 more minutes.
When done transfer to serving dish and add sausage.
