Mediterranean Pasta Salad

INGREDIENTS

16 oz Rotini pasta, cooked
7 oz Jar fire roasted artichokes
2 Stalks celery sliced
2 cp Quartered cucumber
1 Green onion sliced
15 Cherry tomatoes cut in half (more if desired)
1/4 cp Each pitted Kalamata and green olives sliced in half
8 oz Cubed herbed feta
1 Clove garlic minced
1/4 cp Thinly sliced red onion
1/4 cp Chopped parsley
1 T Lemon juice
1/2 tsp Thyme
1/2 tsp Oregano
1 tsp Each salt and pepper
1/4 c Greek Seasonings olive oil (drizzle more if desired)

Directions


Cook pasta as directed on packaging, and cool. In a large bowl combine all ingredients. Add additional seasonings to taste.
