Mediterranean Pasta Salad
INGREDIENTS
16 oz | Rotini pasta, cooked |
7 oz | Jar fire roasted artichokes |
2 | Stalks celery sliced |
2 cp | Quartered cucumber |
1 | Green onion sliced |
15 | Cherry tomatoes cut in half (more if desired) |
1/4 cp | Each pitted Kalamata and green olives sliced in half |
8 oz | Cubed herbed feta |
1 | Clove garlic minced |
1/4 cp | Thinly sliced red onion |
1/4 cp | Chopped parsley |
1 T | Lemon juice |
1/2 tsp | Thyme |
1/2 tsp | Oregano |
1 tsp | Each salt and pepper |
1/4 c | Greek Seasonings olive oil (drizzle more if desired) |
Directions
Cook pasta as directed on packaging, and cool. In a large bowl combine all ingredients. Add additional seasonings to taste.
