Chicken and Pasta with Roasted Artichokes and Spinach

INGREDIENTS

2 Cloves of garlic diced
1 Pkg Boneless chicken breast sliced thin on bias
½ cp Pine nuts
1 Small jar roasted artichokes drained
2 Packages of baby spinach
Sea salt & pepper to taste
4-5 Nests Parapadelle pasta
garnish Italian Hearb Olive Oil
garnish Asiago cheese & sour cream

Directions


Sautee chicken in oil until almost done with garlic, sea salt and pepper in a large pan.

Add pine nuts, artichokes, then stir in fresh baby spinach. Continue to stir just until spinach is wilted.

Parapadelle pasta- prepare as directed, add italian Herb olive oil.

Drain pasta and lightly toss with a little more Italian Herb oil.

Add pasta to pan with chicken, thoroughly combine ingredients and serve in large pasta bowl Garnish each serving with grated asiago cheese and a dollop of sour cream.
