Chicken and Pasta with Roasted Artichokes and Spinach
INGREDIENTS
2 | Cloves of garlic diced |
1 Pkg | Boneless chicken breast sliced thin on bias |
½ cp | Pine nuts |
1 | Small jar roasted artichokes drained |
2 | Packages of baby spinach |
– | Sea salt & pepper to taste |
4-5 Nests | Parapadelle pasta |
garnish | Italian Hearb Olive Oil |
garnish | Asiago cheese & sour cream |
Directions
Sautee chicken in oil until almost done with garlic, sea salt and pepper in a large pan.
Add pine nuts, artichokes, then stir in fresh baby spinach. Continue to stir just until spinach is wilted.
Parapadelle pasta- prepare as directed, add italian Herb olive oil.
Drain pasta and lightly toss with a little more Italian Herb oil.
Add pasta to pan with chicken, thoroughly combine ingredients and serve in large pasta bowl Garnish each serving with grated asiago cheese and a dollop of sour cream.
